Lately I've been trying to really eat a lot healthier so have been trying quite a few new recipes from some of the recipe books that have been collecting dust in my cupboard. I've even went out and bought a couple of nice new baking dishes, just to make things look prettier and more appealing!

ReplyDeleteI enjoy Stuffed Chicken Breasts Supreme. They are pounded, stuffed with salami, swiss cheese, onions(all diced in there), rolled, dipped in egg and then battered and baked. When you slice them you see the "swirl" and fillings ~ yummy.
ReplyDeleteMy two favorites are Redneck Lasagna (basically super-simplified and quick) and Tater-tot casserole - both very good and easy!

ReplyDeleteHmmm. My favorite dish. That's though as I have several. I have an awesome recipe for turkey pot pie. I love Shepherds pie and my cheese burger meat loaf is pretty spectacular too. I can send recipes for any of these if you want.
My favorite healthy recipe is salmon (or trout) baked in a foil packet along with spinach, tomatoes, mushrooms, olive oil and seasoning. Bake at 400 degrees for 20-25 minutes (depending on how thick the fish is). Then serve on top of whole wheat spaghetti and top with feta cheese. Yummmm.

OH MY GOODNESS. I WANT THAT SOOOOO BAD!!!!!!!! My new favorite recipe is French Toast, made with Oatmeal Maple Bread that I make myself. I'd be happy to share the recipe if you email me, but it is long and involved.

My favorite dish is a casserole with pasta, low-fat cream of chicken soup, corn, carrots, white chicken breast cubes, and broccoli, all baked in a dish like this (I need a new one! LOL!) and then sprinkle bread crumbs and shredded cheese on top! It's delicious and healthy! Thanks for the chance!

My favorite dish is Corned Beef and Cabbage. It is such a huge comfort food for me. Unfortunately my family doesn't agree. They complain when I cook it because it "stinks" as they say.
ReplyDeleteI have a TON of favorite recipes- I cook a LOT... so I'll be a total dork and go with my fav. recipe that I cook in the one, lonely Le Creuset pan I own. I make a Dutch Mama- it's a big, fluffy, pancake-like breakfast dish made with lots of egg whites and topped with whatever fruits are in season.

ReplyDeleteWhite Bean and Bacon Soup (Talk about Comfort food)
Serves 8-10
~Ingredients~
1 pound dried navy beans
2 ½ quarts of chicken stock
4 tbs unsalted butter
2 medium yellow yellow onions
3 garlic cloves, chopped
8 large plum tomatoes (1 pound) seeded and chopped
½ pound slab bacon, cut into ¼ inch cubes
1 tsp dried marjoram
salt and freshly ground black pepper
2 bunches fresh parsley, finely chopped, (about 12 tbs)
~~~~OVERNIGHT PREPARATION RECOMMENDED~~~~~~
To pre-soak the beans, place them in a colander and rinse thoroughly with water to clean. Place the beans in a large bowl and cover with water. Let stand at room temperature for at least 8 hours or overnight.
Drain and thoroughly rinse the beans. Place them in a large stock pot, add the stock and bring to a boil over high heat.
Reduce the heat to low and cook for about 1 hour, or until beans are soft.
Melt the butter in a large skillet over medium heat, add the onions and garlic and sautee for 5 minutes, until light brown. Add the tomatoes, bacon, and marjoram, and saute for 3 to 5 minutes more until the tomatoes begin to dissolve.
Add the tomato mixture to the beans in the stock pot. Simmer the soup for about 10 minutes, until the tomatoes are soft. Season with salt and pepper to taste.
Just before serving, stir in the parsley.
It is from the City Tavern in Philadelphia. If you are ever in Old City Philadelphia, you must visit. I did make a couple noteable changes to the recipe….I doubled the amount of slab bacon and added some liquid smoke.

I only use enough oil to make a sandy paste. And I omit the saffron because it's too expensive for me. :)

I would have to say I most love his homemade spaghetti sauce...on anything...spaghetti, baked ziti, whatever. It is seriously amazing that I went through life eating pasta sauce from a jar and had no idea this was available to me! :)

ReplyDeleteMy favorite Recipe (and not just for christmas) is the Christmas Morning Wifesaver. My family recipe that has been tweaked over the years is a closely gaurded secret. but I found one online that is close. BUT warning. Some recipe's call for cornflakes - NEVER USE THEM - it ruins it. We made that mistake once. haha.

16 slices white bread, crusts
removed
16 slices Canadian back bacon or
ham
16 slices sharp cheddar cheese
6 eggs
1/2 tsp. pepper 2 mL
1/2-1 tsp. dry mustard 2-5 mL
1/4 cup minced onion 60 mL
1/4 cup finely chopped green pepper 60mL
1-2 tsp. Worcestershire sauce 5-10 mL
3 cups milk 750 mL
dash Tabasco
1/2 cup butter 125 mL
Instructions:
Set 8 pieces of bread into a 9" x 13" (23 x 33 cm) buttered, glass baking dish. Cover bread with slices of back bacon ( I pre- cook the peameal bacon by frying it up first.. I like it better that way but not everyone does) I also let it cool a bit before assembling after I fry it) . Lay slices of cheddar cheese on top of bacon and then cover with remaining slices of bread to make it like a sandwich. In a bowl, beat eggs and pepper. To the egg mixture add dry mustard, onion, green pepper, Worcestershire sauce, milk and Tabasco. Pour over the sandwiches, cover and let stand in fridge overnight (or.. in the winter we put it in the car overnight since the fridge is often too full!) . In morning, melt butter, pour over top. Bake, uncovered, 1 hour at 350 deg.F (180 deg.C) - (Sometimes I bake longer.. you should mainly be able to tell when its done by the golden brown look) . Let sit 5-10 minutes before serving.

ReplyDeleteMy most often requested dish is butternut squash casserole. I only make it during the holidays--both Thanksgiving and Christmas, so it's become a fun tradition and something special.
ReplyDeleteAs far as all time fave dishes, I find myself longing for fresh veggies and my summer garden! Anything I can pick and then grill with some olive oil and toss with some fresh herbs...sounds like heaven to me right now. Gotta love the simple stuff. :)

ReplyDeleteum, I don't really know the measurements. This is a "just dump it" kind of meal.
Everything is put in based on what you have on hand- and the amount is based on what you have on too. This concept just totally throws me off my rocker- except for this soup. It is the only thing I can do it with for some reason.
Ingredients: Dry Lentils, onion, garlic, bay leaves, salt, black pepper, peppercorns, celery, carrots, turnips, 1# ham steak with bone in, anything else in freezer/fridge that needs to be used and might taste good.
Directions: Sort/soak lentils a few hours before starting soup.
Brown onions in some sort of oil until brown.
Add garlic last to brown (will bitter if added early)
Add ham to get some onion flavor in it.
Add water (4 cups-6 cups, depends on how runny you want your soup...lentils will still soak up some water.)
Put rest of the stuff in there and cook for a while. (low heat for a long time....higher heat shorter time.)
I know that sounds so vague- but that is the directions I got from my mom.
Seriously. She even put a little astrick on the bottom that said *Don't forget you don't even taste salt- ADD THE SALT- ADD MORE SALT- YOUR FOOD ALWAYS TASTES BLAND*

Somehow- that is the only recipe I can make without any help or measuring spoon or book or frantic phone call. It is my go-to comfort food.
Regardless of what I dump in there, magically it always tastes the same.

I just made a lentil pasta sauce that's one of my all time favorites and very nutritious and healthy. Start boiling the water for the pasta. Saute onions and garlic, add 1 cup of lentils, 3+ T. of tomato paste, salt and pepper, and 2 1/2 c. boiling water. Simmer 20 minutes. Meanwhile if you put in the pasta at some point when the sauce is simmering, they should be done around the same time.
